Research

Geneticists at Invictus Informatics are searching for the gene markers responsible for higher protein content and lower cholesterol and fat content characteristic of Texas Longhorn beef. Previous studies have discovered these nutritionals are shared by all Texas Longhorn cattle regardless if Grassfed or grain-fed. Further studies will be performed to analyze amounts of Omega 3 and CLA in Grassfed Texas Longhorn beef compared to conventional beef breeds.
